I’m not vegetarian, but I love vegetarian food and eat lots of it.
I asked my Mum for The Happy Pear cookbook for my birthday last year, and am enjoying trying out some lovely new recipes.
Here’s two I tried recently (but alas, did not take photos of!)
Irish Root Vegetable Soup
Just what it says on the tin (pot?)- a hearty soup full of lovely root vegetables like leeks, carrots, parsnips, and potatoes.
Suitable for: vegetarians (obviously!), coeliacs
The verdict: Lots of root vegetables= lots of chopping, which can actually be a rather therapeutic exercise! Dead easy to make. Tastes like Irish stew in a bowl!
No-Bake Healthy Brownies
6 ingredients and a food processor. It doesn’t get much easier than that! Dates, oats, nuts, cocoa powder and a little vanilla.The brownies are then pressed into a tray and refrigerated before slicing.
Suitable for: vegetarians, vegans, coeliacs (GF oats). Paleo people won’t be happy with the oats, those on a sugar-free kick won’t agree with the dates…
The verdict: Mr. WB said ‘They taste healthy. You’ll like them’ (i.e. I don’t). I say- Rocket fuel! Definitely a good way to get your cocoa hit.
